This week is Chocolate Week, so it seems appropriate to have a post that includes it! One of my new favourite baking suppliers is Baked By Me. Run by the lovely Iris, Baked By Me sells a range of cookie jars and bags, each containing all the dry ingredients to whip up some delicious cookies (all you need to add is eggs and butter).Some examples of their flavours include White Chocolate Mocha, Oat & Raisin and Caramel Chocolate cookies. I recently ordered a few bags and passed one onto my sister who reviewed them on her blog, Work Cook Live. I am not too keen on ‘ready-made’ baking packs, but these were so easy to make and tasted VERY yummy – mostly due to the fact that Iris only uses the best ingredients with no additives or preservatives.Out of my three bags, the first I chose to make was the Caramel Chocolate Cookie Mix. Preheat the oven to 180C, and beat 120g softened butter and 1 large egg in a mixing bowl. Add all the ingredients from the bag/jar and beat together until fully combined. Shape the cookie dough into walnut size balls and place on a lined baking tray (you may need to do 2 batches).Bake in the oven for 8 – 10 minutes or until they are starting to brown on the edges. These were delicious hot or cold, and lasted for a few days in a biscuit tin.I know that Iris is busy taking Christmas orders for her cookies mixes and her fantastic range of bakeware, so be sure to take a visit to her site and order something soon – perfect presents for others and yourself.
